Homemade Healthy Marshmallows Made Without Corn Syrup
These homemade healthy marshmallows made without corn syrup are easy to make and delicious. They pair perfectly with homemade hot cocoa (recipe below) made with only four simple ingredients. Cuddle up on a cold winters day with fluffy marshmallows melting in a steaming mug of hot chocolate, and enjoy the comfort that it brings knowing its made without any sugar or processed ingredients. 1 Small saucepan - for heating up gelatin dissolved in water
1 9 x 9 casserole dish
1 parchment paper
1 Spatula
Ingredients
Marshmallows:
1cupwater
3Tablespoonsbeef gelatin
½cupmaple syrup or honey
2Tablespoonsvanilla extract
¼teaspoonsalt

½gallonraw milk
½cupcocoa powder
½cupsugarhoney or maple syrup

How To Make Homemade Healthy Marshmallows Without High Fructose Corn Syrup
In a small saucepan, sprinkle beef gelatin over warm water. Allow to sit for 5 minutes to "bloom".
Heat bloomed gelatin mixture over medium heat until just before it starts to boil. You don’t really want any bubbles, so turn off the heat right before it starts to simmer.
Stir in maple syrup or honey, vanilla extract and salt.
Add to the bowl of a stand mixer fitted with a whisk attachment.
Turn mixer speed on high and mix until stiff peaks form. This will take about 10 minutes, so be patient.
In the meantime, lightly butter a piece of parchment paper that will fit into a 9 x 9 baking pan.
When stiff peaks form (see video), pour the marshmallow fluff into the pan lined with the buttered parchment paper. Smooth out the top with a spatula. Work quickly for best results.
Place in the freezer for 30 minutes, or the refrigerator for a couple of hours or until set.
Take out of pan, and remove parchment paper. Slice into marshmallow squares using a sharp knife or pizza cutter.
Serve with homemade hot chocolate.
How to make our favorite hot chocolate:
In a large saucepan, combine milk, cocoa, sweetener, vanilla and salt.
Stir with a whisk and heat over medium heat until warm and foamy, but not boiling.
Ladle into mugs and put a marshmallow on top. Enjoy!

Tips For Making This Homemade Marshmallow Recipe?
Keep some organic grass fed beef gelatin on hand so you can whip these tasty marshmallows up at anytime.
Start them at least 30 minutes before you want to eat them so they’ll have time to set up.
Whisk constantly as you’re adding the gelatin to the warm water to avoid it clumping up. If it does, it usually will stir out after sitting for a few minutes.
Watch your water/gelatin mixture on the stove closely to be sure it doesn’t boil. You want to shut the heat off just before it boils.
If you want super stiff marshmallows for smores, you can bring your gelatin mixture to a full rolling boil. Be careful not to let it boil over.
In the bowl of your stand mixer or hand mixer fitted with the whisk attachment. It will take about 10 minutes to form stiff peaks.
To make marshmallow fluff or marshmallow cream, stop mixing when soft peaks form in your mixer.
I like to butter my parchment paper so the marshmallow release from it easier once they set up.
For peppermint flavored marshmallows, replace the vanilla extract with ½ teaspoon of peppermint extract.
Maple marshmallows are my favorite, and can be made extra flavorful by adding ½ teaspoon of maple extract.
Store leftover marshmallows in an airtight container on the counter, or for up to a week in the refrigerator.
