Crispy, golden, and packed with flavor, homemade oven-baked chicken taquitos are the perfect easy meal for any time of year. Filled with seasoned shredded chicken, spices, salsa, and melty cheese, then rolled in tortillas and baked until perfectly crunchy. They’re simple to prepare, great for busy weeknights, and perfect for serving as an appetizer, lunch, or family dinner. Preheat oven to 400 degrees. Prepare the filling by mixing the chicken, salsa, cheese, cream cheese, and seasonings in a large bowl.
Next, form the taquitos by spooning the chicken mixture down the middle of a tortilla and rolling it up.
Place seam side down on a baking sheet and repeat until you’ve filled all the tortillas.
Brush the tops of the taquitos with oil, and then place them in the oven for 25 minutes, until lightly golden brown.
Serve with salsa, sour cream, and fermented jalapenos.
Store the leftovers in an airtight container in the refrigerator for up to a week, or in the freezer for up to 3 months.

Don’t overcrowd the pan – arrange the taquitos in a single layer on your prepared baking sheet so they crisp evenly.
Use a light coating of tallow or oil - I always brush my taquitos with room temperature beef tallow, but if you don't have tallow, you can just brush them with oil. This will give them their crunchy exterior.
Creamy filling makes them better – Mixing shredded chicken with cream cheese, spices, and onion creates a flavorful filling.
Freezer-friendly – Store leftovers in an airtight container in the fridge, or freeze uncooked taquitos in a freezer bag for easy meals later.
Reheat for crispiness – Reheat in the air fryer or oven instead of the microwave to keep them crispy.
