This easy chicken melts recipe is one of our favorites, especially during busy seasons of life like summertime. It’s a mouthwatering combination of chicken, a cheesy sauce, and subtle spices that make it enjoyable for the whole family.
½cuponionfinely chopped (I like to use green onion if its available)
1cupmayonnaise
1quartjar canned chicken OR meat from 1 roasted chicken
1tsp.salt
1tsp.pepper
1tsp.garlic powder
1tsp.onion powder
2 ½cupsof cheese
Instructions
In a large mixing bowl, combine chopped onion, chicken, mayonnaise, salt and pepper, and 2 cups of cheese. Mix well.
Slice bread and lay out flat on parchment lined baking sheet.
Spread chicken mixture on slices of bread as evenly as possible.
Add the rest of the cheese to the top of the each piece of bread.
Bake at 350 degrees for 15 to 20 minutes or until melts are warmed through and cheese is golden brown on top.
Serve with a green salad and pickled veggies from your pantry.
Notes
This recipe is very easy to adjust and I suggest you put different things in it depending on what you have available. You could add pickles and green onions, or add taco seasoning to make it more of a taco chicken melt. Make the filling ahead of time and then you can get a meal on the table even faster.Use leftover chicken or whatever meat you have on hand.
