These easy chicken patty melts are one of our favorites, especially during busy seasons of life like summertime.  It’s a mouthwatering combination of chicken, with a cheesy sauce and subtle spices that make it so enjoyable for the whole family.  We like to make these chicken melts with our soft sourdough sandwich bread for the best nutritional value.  I usually use our home canned chicken because it’s pre-cooked and makes for a very fast meal, but you can easily make these with leftover chicken as well.

We are a homesteading family that strives to eat our own home grown food that we’ve preserved in our pantry as much as possible instead of depending on the grocery store.  We’re also very busy because in the summertime we raise a market garden, so we’re always looking for quick and easy homestead meals.  These easy chicken sandwich melts certainly fit the bill because I can make them quickly from just the ingredients we have on hand.  Home canned chicken, homemade sourdough bread, homemade cheese and a few spices and you’ve got a meal!

Ingredients:

  • Chicken - I like to use my home canned chicken because it’s already cooked and prepared, but you can cook a chicken or use leftover chicken as well.
  • Mayonnaise
  • Onion - green onions are really good, but use whatever you have on hand
  • Salt & black pepper
  • Garlic powder & onion powder - I purchase all my spices in bulk from Azure Standard.  It saves me a lot of money and keeps me out of the grocery store.
  • Cheese - I use whatever homemade cheese we have on hand.
  • Bread - we love these on our soft sourdough sandwich bread

Tools You May Need:

Tips:

  • This recipe is very easy to adjust and I suggest you put different things in it depending on what you have available.  You could add pickles, or add taco seasoning to make it more of a taco chicken melt.  The sky is the limit.
  • Make the filling ahead of time and then you can get a meal on the table even faster.
  • Use leftover chicken or whatever meat you have on hand.  

How To Make Chicken Sandwich Melts

Preheat oven to 350 degrees.

Chop onion and add to a large mixing bowl.

Add chicken, mayonnaise, salt and pepper, and 2 cups of cheese.  Mix well.

Slice bread and lay out flat on parchment lined baking sheet.

​Spread chicken mixture on slices of bread as evenly as possible.  

Add the rest of the cheese to the top of the each piece of bread.

Bake at 350 degrees for 15 to 20 minutes or until melts are warmed through and cheese is golden brown on top.

Serve with a green salad and pickled veggies from your pantry.

Ingredients

  • ½ cup onion finely chopped (I like to use green onion if its available)
  • 1 cup mayonnaise
  • 1 quart jar canned chicken OR meat from 1 roasted chicken
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 ½ cups of cheese

Instructions

  • In a large mixing bowl, combine chopped onion, chicken, mayonnaise, salt and pepper, and 2 cups of cheese.  Mix well.
