Cold Beef Salad Sandwich Recipe
This cold beef sandwich recipe is quick and easy to make because it’s made with canned venison or beef from our homestead pantry. You can also make it with leftover roast beef if you don’t have canned meat.

Ingredients
3-4
cups
canned venison
beef or leftover roast beef
1
cup
mayonnaise
2
cups
sweet relish
4
hard boiled eggs
sliced (optional)
1-2
teaspoons
salt
1
teaspoon
pepper
Instructions
Slice bread (if using homemade bread)
If using canned meat, remove fat and beef broth from the jar.
Dump meat into small bowl and shred beef with a fork.
Add zucchini relish, mayonnaise, salt and pepper.
If using hot peppers or hard boiled eggs, they can be added now as well.
Mix well.
Lay out slices of bread.
Place filling onto one side of sandwich bread. May add a slice of provolone cheese or swiss cheese if desired. Top with another slice of bread.
Put sandwiches into sandwich bags for easy lunches.
This sandwich filling will keep in an airtight container in the refrigerator for up to one week.
This should make enough filling for 6-8 sandwiches.
