This is the best slow cooker beef roast recipe my family has ever found. We raise our own beef, and have made many beef roasts over the years. But when we found this recipe, we never looked back. It’s flavorful, delicious and tender beef, and the broth makes the most delicious gravy that can be served over mashed potatoes. Perfect for those fall and winter evenings, I know you’re going to love this recipe as much as we do.
In a large skillet over medium high heat, heat the tallow or butter until melted.
Rub salt and pepper into the roast and sear it in the fat in the skillet until each side is a deep golden brown.
Remove the roast from the skillet and place it into the slow cooker.
Add the onions and garlic to the skillet and saute for 3 to 4 minutes, or until soft.
Deglaze the skillet by adding the beef broth to the hot skillet and using a wooden spoon scrape any cooked bits from the bottom of the skillet.
Add the stock mixture from the skillet to the slow cooker, along with the rest of the ingredients.
Cover and cook on low for 8 hours. Use the drippings to make a brown gravy to serve over the roast and some mashed potatoes. Enjoy the best roast you'll ever eat in your life!
To make the brown gravy: combine 2 tablespoons of fat (butter or beef tallow) in a small saucepan with 4 tablespoons of flour and cook until thick. Add 2 cups of the broth from the cooked roast, and salt and pepper to taste.

This recipe works best with a thawed roast, but I have made it many times with a frozen roast and it always turns out delicious.
If using a roast wrapped in butchers twine, leave the twine intact until after the cooking is complete.
You could also cook this roast in a dutch oven in the oven for 3 hours at 350 degrees instead of using the slow cooker. We have found the best way to cook this roast is with the low heat of a slow cooker, because it allows the flavors to really blend, but you can cook this roast many different ways.
If you prefer to use your instant pot pressure cooker, just sear the roast in the instant pot in some beef tallow or butter. Add the rest of the ingredients and set it on high pressure for 60 minutes.
Searing the meat at a high temperature before slowly cooking it keeps all the moisture inside the meat, making it extra tender, juicy and delicious.
Leftover roast beef can be stored in an airtight container in your refrigerator for several days. Use it in beef salad sandwiches, beef pot pie, or sourdough stromboli.
