The Best Slow Cooker Beef Roast Recipe

This is the best slow cooker beef roast recipe my family has ever found.  We raise our own beef, and have made many beef roasts over the years.  But when we found this recipe, we never looked back.  It’s flavorful, delicious and tender beef, and the broth makes the most delicious gravy that can be served over mashed potatoes.  Perfect for those fall and winter evenings, I know you’re going to love this recipe as much as we do.

There’s nothing better than coming inside after a long chilly fall day working outside, to the smell of a roast cooking.  It’s also such a great feeling knowing that dinner will be ready for you when evening time comes.  I love to start this perfect roast beef first thing in the morning, and let it slowly cook all day in the crock pot.

I typically serve this roast alongside mashed potatoes and corn, for a hearty and filling meal.  My favorite way to make mashed potatoes is in the instant pot, and you can also start the potatoes earlier in the day using the instant pot timer.  This way you can have dinner on the table in just a few minutes.  You could also add carrots and potatoes to the roast in the slow cooker, making it more of a pot roast type meal.

Quick – can be made with frozen or thawed roast, and comes together quickly after a quick sear in a cast iron skillet

Flexible – this recipe works for lots of different cuts of meat.  I prefer to use a chuck roast, but any kind of roast will work.

Simple – made with home canned beef stock and a few spices, this recipe is probably something you’ll have the ingredients on hand for most of the time.  The cooking process is simple and the prep for this recipe can be done several hours before dinner time.

Delicious – The beef broth and seasonings in this recipe give the tender roast beef the very best flavor of any roast you’ll ever eat.  It is one of our family’s favorite meals!

Tips

  • This recipe works best with a thawed roast, but I have made it many times with a frozen roast and it always turns out delicious.
  • If using a roast wrapped in butchers twine, leave the twine intact until after the cooking is complete.
  • You could also cook this roast in a dutch oven in the oven for 3 hours at 350 degrees instead of using the slow cooker.  We have found the best way to cook this roast is with the low heat of a slow cooker, because it allows the flavors to really blend, but you can cook this roast many different ways.  
  • If you prefer to use your instant pot pressure cooker, just sear the roast in the instant pot in some beef tallow or butter.  Add the rest of the ingredients and set it on high pressure for 60 minutes.  
  • Searing the meat at a high temperature before slowly cooking it keeps all the moisture inside the meat, making it extra tender, juicy and delicious.
  • Leftover roast beef can be stored in an airtight container in your refrigerator for several days.  Use it in beef salad sandwiches, beef pot pie, or sourdough stromboli.
  • This beef chuck roast recipe is delicious enough for a special occasion like Sunday dinner, and yet easy enough for a standard weeknight meal.
  • To make a classic pot roast recipe, add potatoes and carrots to the bottom of the pot before adding the roast.
  • To make a delicious beef gravy combine 2 tablespoons of fat (butter or beef tallow) in a small saucepan with 4 tablespoons of flour and cook until thick. Add 2 cups of the cooking liquid from the roast, and salt and pepper to taste.

Simple Beef Roast Ingredients

  • Beef Roast – our favorite tender cut of beef for a roast is always a pot roast, but you can use tougher cuts of beef like top round or a rump roast as well.
  • Beef tallow or butter – for searing the roast
  • Onion – fresh onion gives this dish an excellent flavor
  • Garlic – fresh garlic is best, but use garlic powder if that’s all you have
  • Broth – home canned bone broth is the best because of it’s great health benefits and rich flavor
  • Sage – use fresh or dried sage, whatever you have on hand.
  • Worcestershire sauce – gives the roast a depth of flavor that you’ll love.
  • Soy Sauce – give the roast an incredible flavor
  • Salt & black pepper – always my seasonings of choice

How To Make The Best Slow Cooker Beef Roast Recipe

In a large skillet over medium high heat, heat the tallow or butter until melted.

Rub salt and pepper into the roast and sear it in the fat in the skillet until each side is a deep golden brown.

Remove the roast from the skillet and place it into the slow cooker.

Add the onions and garlic to the skillet and saute for 3 to 4 minutes, or until soft.

Deglaze the skillet by adding the beef broth to the hot skillet and using a wooden spoon scrape any cooked bits from the bottom of the skillet.

Add the stock mixture from the skillet to the slow cooker, along with the rest of the ingredients.

Cover and cook on low for 8 hours.  Use the drippings to make a brown gravy to serve over the roast and some mashed potatoes.  Enjoy the best roast you’ll ever eat in your life!

Ingredients

  • 2 Tablespoons fat beef tallow or butter
  • 1 3 to 5 lb. beef roast – chuck is our favorite
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 onion roughly chopped
  • 4 cloves garlic chopped
  • 2 cups beef broth
  • 2 Tablespoons worcestershire sauce
  • 2 Tablespoons soy sauce
  • 4 fresh sage leaves or 1 Tablespoon dried sage
