This easy sausage gravy breakfast pizza with a sourdough crust is one of our favorite breakfasts to make.  It looks like you spent a long time making it, when actually it only takes a few minutes.  Sourdough sausage gravy is paired with a simple sourdough discard pizza crust, and is topped with fried eggs and shredded cheese.  This is the perfect hearty and delicious breakfast recipe the whole family will enjoy and ask for time and again.

What Are The Health Benefits Of Sourdough?

Anytime you add a fermented element like sourdough to a recipe, it becomes more nutritious because it contains live probiotics and good bacteria that help with gut health and digestion.  Gluten and phytic acid are naturally present in wheat, and are usually what is to blame for people not being able to digest gluten well.  When the grain is fermented through the sourdough process, the gluten and phytic acid are broken down, making it easier to digest.  A lot of people that struggle with gluten intolerance (not people with celiac), can digest food made with sourdough without any issue, especially if the recipe is allowed to sit out for a few hours and “long ferment”.   

In addition, phytic acid is an anti-nutrient that blocks absorption of the nutrients found in wheat. During the sourdough fermentation process, the phytic acid gets broken down and the nutrients are more bio-available to the body. This is why baking with sourdough is so important for our health.

Tips For Making Sausage Breakfast Pizza With A Sourdough Crust

  • Be sure to keep a large amount of sourdough discard in your refrigerator at all times so you have plenty when you want to make this simple sourdough discard pizza crust.  If you don’t have a lot of discard on hand, be sure to feed your starter the night before wanting to make this pizza crust.  That way you’ll have enough starter in order to make it.
  • You’ll need to have a pizza stone or large cast iron skillet for making the crust.
  • I used to make this by dropping the raw eggs on top of the pizza and then baking until they were set. But our family doesn’t really like the texture of them that way.  So we cook the eggs in a skillet leaving the centers a little runny, and then just put them on top of the pizza.
  • Feel free to add whatever other kind of pizza toppings you like.  Bell peppers, green onions and even hash browns are delicious on this pizza.  Make it your own.
  • I always grate my own homemade cheese, but if I were using storebought cheese, I would still grate my own to avoid all the nasty non-caking ingredients they add to shredded cheese from the grocery store.
  • You can use the same large skillet or pan on the stovetop to cook the eggs and make the gravy.  Be sure to cook the eggs first, or else they will stick to the pan once the sausage has been cooked in it.

Simple Ingredients

  • Sourdough starter discard – learn how to make a sourdough starter here.
  • Salt  – Redmond real salt from Azure Standard is my favorite, but any kind of table salt will be just fine.
  • Black Pepper
  • Sausage – We make our own venison breakfast sausage, but any kind of sausage will work.
  • Fat – I like to use homemade butter because of the flavor, but you can use olive oil, coconut oil or melted beef tallow as well.
  • Milk – I use the milk from our Jersey cows, but you can use any kind of milk you have, even non-dairy milk.
  • Eggs – we like to fry our eggs and then place them on top of the pizza.  You could also put scrambled eggs on top of the pizza in place of the fried eggs.
  • Cheese – I use our homemade gouda, asiago, cheddar or mozzarella cheese, but use whatever cheese you have and it will be delicious.

How To Make This Sausage Gravy Breakfast Pizza With A Sourdough Crust

Prepare The Pizza Toppings

Place your pizza stone or cast iron skillet into the oven and preheat both the oven and the skillet at the same time to 425 degrees.

Meanwhile, heat 1 Tablespoon of butter in a cast iron skillet on the stovetop over medium heat.

Once the skillet is hot, add the eggs, flipping them once the edges start to set.  This will give you “over easy” eggs, where the yolk is still a bit runny and the outsides are done.  Remove the eggs from the pan and put them on a plate off to the side.

In the same skillet, cook sausage until it’s brown.  

Add the fat, flour, salt and pepper and stir until thick and bubbly.

Add the milk to the skillet and stir occasionally until gravy is thick.

Make The Pizza

Remove the hot cast iron skillet or pizza stone from the oven and place it on your stovetop, or on a hot pad on your counter.

Pour sourdough discard straight onto the hot pan or stone.  Spread it out quickly with a wooden spoon, coating the whole skillet and sides of pan.  The starter will start cooking immediately creating a simple sourdough pizza crust.

Sprinkle with a little salt and drizzle with a little olive oil or beef tallow if desired.  Put the skillet or stone back into the oven and bake for 10 more minutes or until golden brown.

Remove pizza crust from the oven and cover with creamy sausage gravy.  Arrange the eggs over the gravy and sprinkle with shredded cheese.

Return to the oven for just a couple of minutes until the cheese is melted.

Slice with a sharp knife. Serve alongside some fruit and orange juice or a glass of raw milk for a delicious breakfast.

Store leftover pizza in an airtight container for up to a week in the refrigerator.

  • Sourdough Pizza Crust
  • 2 cups sourdough discard, approximately
  • 2 Tablespoons olive oil or melted beef tallow, optional
  • Salt & Pepper
  • Sourdough Sausage Gravy
  • 1/2 pound of breakfast sausage
  • 1/4 cup butter, optional
  • 1/2 cup of sourdough starter
  • 2 cups milk
  • 1 teaspoons salt, or to taste
  • 1/2 teaspoon black pepper
  • 10-12 fried eggs
  • 2 cups shredded cheese
