I love to bake with sourdough, and quite often we have something with sourdough for breakfast. I like to make an egg yolk coffee every morning. It gives my body nourishment until I can make breakfast. The great thing about an egg yolk coffee is that it doesn't taste like raw egg yolks; it just tastes like rich and creamy coffee. Farm-fresh egg yolks can be very nutritious, and this is a great way to include them in your diet. I don't like to drink coffee without some kind of protein, because it can make me feel jittery. So if I'm going to drink coffee first thing in the morning, I always make an egg yolk coffee with collagen, cream, maple syrup, and a little salt.

Brew your coffee. I like to brew ours in an old-fashioned stainless steel percolator.

Whisk the Yolks WellBeat the egg yolks with sugar until light and frothy. This gives a smooth, custard-like consistency.
Pour Carefully- Use hot but not boiling coffee, or place the cup over a bowl of hot water while mixing, to avoid curdling the eggs.
For a natural twist, replace sugar in creamy egg coffee with coconut sugar, honey, maple syrup, or date syrup to enhance the custardy flavor without overpowering the coffee.
