This green bean casserole recipe is made with a simple homemade sourdough white sauce and topped with crispy, sourdough French-fried onions. Unlike the traditional green bean casserole, this one doesn’t have cream of mushroom soup in it, making it healthy, fresh, and flavorful. The creamy sauce with a sourdough tang, tender green beans, and crispy sourdough onions all come together to make an irresistible dish for your holiday table.

I have always loved the classic green bean casserole.  It’s the perfect side dish for any occasion, and an excellent addition to any holiday meal.  But I didn’t like always having to buy canned cream of mushroom soup because it’s expensive and unhealthy.  So I came up with a way to make this easy green bean casserole with ingredients I can produce on my own homestead.  The green beans we grow in the garden, preserve them by canning them and then store them in our homestead pantry.  The white sauce is made with cream from our Jersey cows and a few spices we store in bulk. And the onions we grow in the garden too. So simple and delicious!

Why You’ll Love This Recipe

  • Easy to make – this dish comes together quite easily.  The cooking process includes french frying a few onions while mixing up a simple white sauce.  Just add in some green beans, cover with the onion topping, and toast it all in the oven.
  • Delicious – I love the fresh flavors in this dish!  Everything is made with sourdough, so it has an added depth of flavor that you will love.
  • Healthy – if you are diabetic or gluten intolerant, this dish is for you.  The white sauce and the french onions are both made with sourdough discard, so all of the phytic acid and most of the gluten has been broken down in the flour, making it very easy for your body to digest.
